Infusion technology

On the past Valentine's day, I've heard the news about the new 'chocolate' from Japan. Then I've searched on internet and found out more information that I want to share with you.



You can see the above 2 pictures of strawberries and currants, but they're actually 'infused' with chocolate.
This is one of the new products from Tokyo company FCOM (Fresh Functional Food Composite) Company. They use the idea of creating new types of composite food by infusing one food into another.
The trick is to first freeze-dry the strawberry to remove the water, and then infuse the white chocolate into the spaces left behind. FCOM had previous products like apples infused with red wine, however their goal is to infuse something surprising and functional, like food infused with various nutrients could be produced for seniors who can't eat very much etc.
